    I’m doing some research, with the idea to write a short paper, into Juniper varieties such as: Common Juniper – juniperus communisWestern Juniper – juniperus occidentalisSierra Juniper – juniperus occidentalis australis Utah Juniper – juniperus osteosperma Rocky Mountain Juniper – juniperus scopulorum Does anyone use (or know a distiller that uses) a variety of juniper other than communis?     We use a blend of western and common, mainly due to our location of being in north America’s largest western juniper forest. We pick and wash them ourselves.

    CFR for GRAS botanicals specifically mentions communis.  None of the others.

    If you are using something else, do you have an approved formula that indicates you are using another species?

    What about Alligator-Juniper berries?

    Is anyone using them (except me) for (small batches) Gin?

    It’d be interesting to do some research into communis’ different flavor profiles based on region as well. Altitude and temperature will affect the flavor (significantly imho).
