    Most of what I have read about absinthe says it was originally aged in oak barrels, and I believe the Jades still are.Has anyone tried using oak with theirs?

    Damn! I was sure I had a reference, but can’t find anything now, other than a line in the 1908 de Brevans on the making of absinthe, in which it say it is aged in barrels. Maybe I just inferred/imagined the oak.However, since just about everything liquid that needed to be stored in those days was stored in barrels, it is quite possible the aging in barrels had more to do with aging than the barrels, and the barrels were used and reused until they introduced little or no flavor of their own.

    i have also heard o it being aged on oak. but i think it was second fill brandy barrelsWhiskey, the most popular of the cold cures that don’t work (Leonard Rossiter)
