    I stopped by and purchased some sugarcane juice yesterday, and the gentleman gave me a couple of gallons of syrup. They had made the week prior and it came out a little dark.It takes 10 gallons of juice to make 1 gallon of syrupI’m wondering if 2 gallons of syrup is enough or too much for a 5 gallon run of rum.I did several searches within the forum and couldn’t find any info identifying specifically sugarcane syrup recipes.Thanks for any advice, this will be batch number six for me

    Use your hydrometer or refractometer for measurements. Treat it like sugar. Personally, I aim for around 16 Brix, or SG 1.064.Depending on the Brix of the original juice, you would make the syrup up to more or less the original volume for fermenting. 2 gallons in 5 gallons would be far too high unless the juice was very low in sugar.

    +1 for Chris’s suggestion. Re hydrate with water to 1.060-1.070 range, ferment it and run it (twice). Should be a nice drop!Cheers,jonny————i prefer my mash shaken, not stirred————

    I’ve used 24 ounces of pure cane syrup per gallon of wash with good results.🎱 The struggle is real and this rabbit hole just got interesting. Per a conversation I had with Mr. Jay Gibbs regarding white oak barrel staves: “…you gotta get it burning good.”
