    Hey all,I seem to have a stalled fermentation. Attempted the UJSSM on Nov. 1.-8 L tap water-28 L bottled spring water-6 kg cracked corn-6 kg sugar-28 mL Brewer’s YeastIt took a little while to really get going. By Nov. 6 it reached peak activity insofar as producing carbon dioxide goes. It seems to have finally stopped producing gas as of now (Nov. 24). However, the hydrometer tells me that the specific gravity is 1.008. I got some litmus strips and it came back at pH 4. I have been careful to keep the temperature between 25 – 30 Celsius the whole time.Things I speculate that it could be:-The only corn I could find was bird feed. It might have preservatives in it. No one I spoke to could tell me one way or the other if it did or not.-My yeast might be sub-par. I bought it at the local Bulk Barn.-My water might not have been well aerated.-My yeast might lack nutrients.I’ve been contemplating creating a yeast bomb.     I’d say it’s done, take the lid off, get a small sample and taste it.If it’s sour and makes your face pucker your good to go.Hydrometer readings can be wrong at times.

    1.008, I think the UJ is done or almost done and not stalled. A PUGIDOGs yeast bomb is used at the beginning of fermentation.Add nutrients at the beginning, not at the end. As they say, an ounce of prevention is worth a pound of cure.

    Other than not using to much backset ,if you stick exactly to the recipe it should ferment just fine for many many generations in a row.I’ve never found any need for nutrient additions, or PH adjustment the grain supplies all that is needed and correct amount of backset takes care of PH.
