    I’m curious to hear what you fine folks are aiming for proof from the still? Do you go all the way to 80% and then diluting it to meet the requirements of no more than 62.5% or staying around the max barrel proof?

    Our spirit run yields an aggregate proof of 151proof usually and we barrel at 118 proof for 30’s & 53’s and 10’s go in at 125 so far so good.

    Why the different proof for the 30s?

    Our proff going in s different for our 10’s not 30’s. No big reason, just tried it and the finished product I like better coming out of the barrel after it is proofed down. I have no scientific reasons, just empirical.
