I was out for a forage today, to see what was growing around where i am camped near the river avonCame across wild growing hops in the hedgerow, so as you would, i picked a doggy poo bag full of them wow they smell buuutifil, apart from making beer is there owt i can make or flavour with them, and can i preserve them or make an extract.Found also a russets apple tree growing wild and numerous other apple tree’s as well, god i love foraging, ohh and sloes. Natures bounty at its best.

To preserve hops dry them and then store in an airtight container. Vacuum seal them if you can. I vacuum seal and put them in the freezer and have used them 3 years later and they are fine. Depending on how you are using them for flavor you probably need more than a small bag. Although it will vary, wild hops are usually very low on alpha acids, that part which makes beer bitter, often in the 2 to 3% range. Some people have made a hop gin by using hops in a gin basket. I have not tried it but it could be good if you like an IPA

Duplais used x/10 in gin.I’ve used x/12.5 to make nice gin, cut back on your usual amount of citrus.I dry my hops then store in glass in the fridge. I only store until the next harvest. You can add hops to kit beers and I have done it successfully, but I’ve stopped brewing beer at home.

I may try the gin with hops, good point cutting down on the lemon could get over powering with citrus. In the end i bunged them in the ninja air fryer on dehydrate fot 2 hours worked a treat, and sealed them in a kilner jar.

With wild hops I would not worry about it being over citrus. I have tried several wild hops in beer and if you put enough in you will get good bittering. but all the flavors were more like a Willamette or other non-citrus, perhaps earthy hop. And due to the amount needed there were some vegetal/grassy flavors
