  Accelerated aging labeling statement

  Hey everyone! I have a question regarding speed aging.

  We have been experimenting with speed-aging whiskey and gin for about 1-2 days with oak spirals. The end product tastes great and we want to bottle and sell it however, I cannot find anything regarding what to put on the label. I know the TTB would want something since it is an added processing step and changes the color, I just don’t know what.

  Any direction would be much appreciated, thank you!

  As a rule, whiskey ages must be stated on the label if aged under 4 years. To call a product Whiskey, it must see the inside of an oak container for a nonzero amount of time – with the exception of Corn Whiskey. This applies regardless of your “speed aging”. You may only take credit for aging that takes place inside an oak container (whether or not staves/spirals are also involved).

  If you treat your Whiskey or Brandy product with wood (in any way aside from barreling), such treatment must be disclosed on the label.  This requirement does not apply to Gin, however.
